How do you make a scrambled egg breakfast nacho?

Typically I advocate for undercooking eggs, to preserve their tender nature, but less moisture is best for the tortilla chips. A great tip for cooking eggs, try this recipe

  1. Layer chips, cheese, bacon, corn, jalapeño, black beans and bake.
  2. While the first layer bakes, heat olive oil in a medium skillet over low heat. When oil is shimmering and fluid, add in whisked eggs and cook on low until scrambled, but do not overcook (keep them on the runnier side). Salt and pepper to taste. When eggs are cooked, set aside.
  3. Spread the eggs on top of chips, cover with more bacon, beans, jalapeño, corn, and cheese, and bake!
  4. When cheese is melted, remove from oven and top with fresh cherry tomato, feta, cilantro, and lime.
  5. Serve immediately!

Start with your favorite chips and a good quality cheese!

And you can always reheat the nachos, by broiling them under low heat, to get the crispy texture back.

Food is one of the biggest (and most favorite) resources that we have for making family time special.

I know, we don’t always have the time to make every meal fancy.

You may love making a fun, creative presentation (check out these breakfast boards), or just keeping it simple.:)

Maybe it’s a picnic, camping food, or enjoying weeknight meals outside. This is the first year since we’ve lived here that we don’t have a ton of mosquitoes to put up with. It’s been a glorious summer eating outside.
