Friends, just in time for summer, a yummy Summer Pineapple Cheese Board! So easy for last-minute guests stopping by, or a late night dinner. A few bites to nosh on is all that we need, right? Visiting New Orleans

Today we’re headed out on a food tour, The Original Tastes of the French Quarter, where we’ll be popping into local eateries to enjoy Cajun and Creole dishes!
Last night Chef Jerry (here at the hotel) cooked us a 6-course “Chef’s Table Dinner” right here in the kitchen of our hotel. So fun and good (check out my Instagram story this morning before it goes away, to see all the yummy dishes).
In the meantime, espresso every morning at the gorgeously renovated Le Meridien New Orleans hotel.
And we’re ready for the day!
Don’t stress over a cheese board
Don’t stress over a cheese board. If you’re like me, you have several cheeses on hand, dried nuts, and fruit. Add in fresh fruit and crackers. Go with the flow, check out what you have in your pantry!
For this board I was out of salami and cured meats, so I used a delicious chicken sausage from Trader Joe’s (pre-cooked). This was a fun surprise to add to the board! I slightly warmed up the sausage and cut into small bites.
Next, I cut up a whole pineapple and served large chunks (delicious paired with the sausage and cheese).
I was recently talking to a friend about why it’s easy to go through a whole day, and then realize something is missing. Ridiculous, when quite honestly we have everything that we need. With so much social media, and looking for happiness in all the wrong places (wasting time online, not looking around to see the beauty in the day, or what we can do for others), it’s a no-brainer why we sometimes get in a slump.
Summer Pineapple Cheese Board
I feel what we are missing is cozy hosting. Preparing a few bites (doesn’t have to be elaborate) and inviting people in. This kind of hosting (a simple cheese board) has become a new pattern of entertaining in my home.
Once you have this board prepared, you sit down with a glass of wine and enjoy—no more work to be done! You can really focus on the people around your table.
Our world would be a better place if we’d all try to build new traditions and think of easy ways of serving food to others.
When we open our hearts and our homes and expand our tables to people—friends and neighbors—you can’t help but have that void in your heart filled.

Ingredients
- Brie
- Boursin Gournay Cheese
- Trader Joe's Chicken Sausage
- Pistachio nuts
- Pecans
- Fresh cherries
- Fresh pineapple
- Dried apricots
- Crackers, Lesley Stowe
Instructions
- On a large board or platter, arrange the food. Garnish with a fresh rosemary sprig.
- Serve and enjoy!

Is the sausage served warm?
I barely heated it up before adding to the board. The sausage I bought was precooked, so it could be served either way. Warm is best!
